Unfortunately I'm not currently in the position to plant anything out, hence my current setup of using very little in the way of organic matter in my potting mixtures. In theory this should reduce growth rates while still keeping the plants going, though I would really like to plant some of my bigge...

I agree based on the description that it is possibly an issue with mould. It is worth noting that 'Mediopicta Alba' is much more susceptible to mould than other forms/cultivars of Americana. It looks like A. parryi to me. As for the variety I would probably say var. truncata owing to the angle of the terminal spines and the rounding of the leaves towards the tips.
