I have 2 plants but despite them both being at a cosy 18c for the winter, one has decided to rot now.
I have saved 3 healthy stems but have no experience of rooting them.
Advice please?

They seem to have a death wish, Mike! I had a lovely clump until a couple of years ago, that decided to dry up on me, but I managed to root a couple of stems in cat litter, which (fingers crossed) seem to be OK at the moment. They can be a bit reluctant to root, but did do so in cat litter. Plenty of bottom heat required I think.
