As chance would have it one was in flower today. I checked it and the stamens did move.

I remembered an article about this by Len Jeffries in Cac. Suc. J. 1966, 28, 78-79 and he checked a lot of cacti finding Notocactus scopa one of the best performers but also observing the phenomenon in N. ottonis, N. erinacea and Neoporteria curvispina in addition to six species of Opuntia and Pterocactus tuberosus. Len did make the comment that it happened during hot weather.
Len also pointed out that stamen irritability had been observed by Charles Darwin in Opuntia and that it is also mentioned in Borg's cactus book as occurring in Echinocactus, Mammillaria and Coryphantha.
And I do feel a sense of history in that I still have that very same clone of Pterocactus that Len grew and have recently passed it on to another Forumite.
