Being inquisative by nature and Lithops being in vogue at present I thought I would get a VSTIA Lithops ( Very Scabby Throw It Away) and see what it looked like inside.
The thing in the middle is the new flower bud developing

Quite interesting are they little air pockets?.

well Tina , it is interesting you should ask that. They look like air pockets but they could be enlarged cells as this plant had been recently watered or there again they could be a way of scattering the incoming light. Maybe one of the biologists could tell us

Cor! That's fascinating! Thanks for sharing Roy!
A while back when I was trying to see if I could rescue a rotted cactus, I cut back to the green flesh as advised on here (unfortunately not enough to do anything with), and I was struck by how nice it smelled!

Tending more towards cacti :D, particularly Gymnocalyciums, Rebutias, Sulcorebutias, Echinopses, Thelos, Feros and Mamms (and anything else I like the look of!) all in an 8 x 6 polycarb greenhouse and a few windowsills!

Just as it happens I went in the greenhouse tonight and one of my Lithops had collapsed ( I new it had had too much water) and the soggy mess revealed the bubble like structure
