Echinopsis falling over
Will the base ever thicken up? Can I plant it deeper?

No base won't thicken.
Two choices
- chop it and re-root the top, and have lots of offsets forming from the top of the bottom half.
- rather than a stick perhaps a large stone or pebble at the base may stop it falling over.
If you want to keep the stick in I'd be tempted to push it in more so that it doesn't protrude above the top of the plant for safety.

Yea, perhaps two cuts.
One an inch from the bottom. The offsets will soon cover the stump.
And another just where it begins to widen.
The mid section could be used to gather more offsets in time.
I also think it might need more light and perhaps less nitrogen in the feed.
