Aeonium Cristate

Hi,
I have an aeonium cristate (tricolour) I think which I have been trying to persuade to revert to "normal".
I think I have finally succeeded. This means I do have some small offsets (cristate) if anyone wants to cover postage. I am sure I have asked this before, but I would be grateful to know why a plant becomes cristate in the first place? I know it continues to grow in that form but I would just like to know what prompts it into that mode.
