Just wide enough for two benches and an aisle and then you could stick a piece of polycarb between the two for extra growing space?

Seriously, I have about 18" between mine and a hedge and it's very tight but I can move in there and clean and replace glass ok. 2ft should be a bit more comfortable.

I've two areas where greenhouses are almost touching, about 4ins apart. One area has a 8ft x 6ft greenhouse running parallel with part of a 8ft x 40ft greenhouse, replacing glass would be awkward but has not been necessary for the 25 years that they've been there.

Wide enough to walk sideways between; narrow enough so it won't get filled with pots, ladders, watering cans, broken trays and other assorted clutter.

I too have an 18 inch slab path between two of my greenhouses, and I try to keep it clear of debris.
